Vinification:
The harvest is made by hand. After destemming and skin contact for around 8 hours, pressing is done by pneumatic press. The juice can settle then for about 12 hours, only the clear juice is used for fermentation with only natural yeast in temperature controlled stainless steel tanks.
Wine description:
Focused, almost overripe Riesling fruit on the nose; racy acidity with traces of minerality on the palate noble flavour of apricots and a touch of peach – the result of strict grape selection!
